Instructor: Chef Kip Peters. Join us as we celebrate Mexican Independence Day. Menu includes Tortilla Soup, Jicama Salad with Cumin, Orange, and Red Onion, Roasted Poblano Salsa, Tomatillo Salsa, Spicy Carnitas, Jalepeno Chicken, Orange and Mango Flan, and Southwestern Bread Pudding. Chef Peters has been the Executive Chef of the South Bend Country Club since 1989. He is currently president of the South Bend Chapter of the American Culinary Federation and was 2001 Chef of the Year. He serves part time as an adjunct professor for the Ivy Tech Culinary Arts Program. Class level: beginner. Class style: demonstration.
