Menu includes French Onion Soup, Roasted Striped Sea Bass Mediterranean, Mini Ratatouille with Sun Dried Tomato Orzo, Carrot Sauce, Herbs Cream Sauce, and Tart Tartin. Chef Louineau holds a “Certification Professional d’Hotellerie” from the French Culinary School. He is a former Maitre d’ for the staff of French President Mitterand and is currently Test Kitchen Chef for the University of Notre Dame. Class level: intermediate. Class style: demonstration.
