2004 Cooking Class Schedule
Wednesday,
February 2nd, 6-8 p.m. "La Cocina Nueva Cubana" Cost $20
Instructor: Owner Fred Whitlock. The ingredients and flavors of
Cuban cuisine have been developed for centuries. Tonight we'll bring
them together into some totally modern dishes of the kind currently
being served in some of the fine Miami area restaurants. We'll make
an Avocado, Tomato and Goat Cheese Salad, Sautéed Scallops
with Cilantro Sauce, Pork Tenderloin with a Mango Ginger Salsa and
we'll finish wit h a dessert of Coconut Bars and Guava. If we can
find some, we'll also make some "maduros fritos" or fried
plantain. It should make any Nuevo Cubano happy! Class level: beginner.

Tuesday,
February 8th, 6-8 p.m. "Mardi Gras!" Cost: $35
Instructor: Chef Pete Pica. Couldn't make it down to Louisiana for
Mardi Gras? Don't let that stop you from celebrating this famous
festival-come help us party at The Good Gourmet as Chef Pete Pica
tempts us with his very own New Orleans style recipes. Learn how
to throw your own Mardis Gras party as well as some history of the
celebration. The night's menu will include Seafood Gumbo, Chicken
Jambalaya, and Mardi Gras Punch. Traditional King Cake will be provided
along with an explanation of its significance as it pertains to
the Mardi Gras traditions. And in keeping with that tradition be
sure to wear a costume - this includes a mask or face painting,
wigs, etc. Chef Pete will be dressed to the hilt! You won't want
to miss out on this one! Class level: beginner. Class style: demonstration.

Cooking Class Policies
Classes are either demonstration-style
or hands-on (as indicated on the schedule) and include recipes
and sample tastings. Menus are subject to change at the chef’s
discretion.
Students of any skill level are
welcome at all classes. We indicate skill levels on class descriptions
to reflect the level of skill necessary to recreate a particular
class’s recipes at home.
Reservations are accepted on a first-come,
first-serve basis. Space is limited so enroll early to avoid disappointment.
If a class is full, your name will be placed on a waiting list
in the event there are cancellations.
Payment in full must accompany each
reservation. Reservations may be taken on our website (www.thegoodgourmet.com),
by phone, or in person at our store. Phone or website reservations
require payment by credit card. At the store, reservations may
be paid by gift certificate, cash, check or credit card. No discounts
will be applied to tuition.
If you chose to cancel once you
have registered, we will refund tuition for your cancellation
up to ten days prior to the class. After that time, no
refunds will be given. We invite you to send a substitute in your
place if you are unable to attend.
We may cancel classes for insufficient
enrollment, inclement weather or other unforeseen circumstances.
In such cases, we will notify students by telephone and make full
refunds.
Class seating is on a first-come,
first-serve basis. We ask that you arrive for class no more
than 30 minutes prior to the scheduled start time. This allows
our staff and chef to have time to complete preparations for the
class. Classes will begin promptly. Class participants will enjoy
a 10% discount on in-stock merchandise during the evening
of the class only.
