The ingredients and flavors of Cuban cuisine have been developed for centuries. Tonight we'll bring them together into some totally modern dishes of the kind currently being served in some of the fine Miami area restaurants. We'll make an Avocado, Tomato and Goat Cheese Salad, Sautéed Scallops with Cilantro Sauce, Pork Tenderloin with a Mango Ginger Salsa and we'll finish wit h a dessert of Coconut Bars and Guava. If we can find some, we'll also make some "maduros fritos" or fried plantain. It should make any Nuevo Cubano happy!
