Instructor: Chef Eileen Quinn. Olives have been cultivated for over 6000 years. No longer a bland component of the relish tray, olives play a delectable part in many cuisines. A wide variety of olives will be featured tonight in such dishes as Warm Olive and Caramelized Onion Tart, Beefe Roulades with Parmessan, Pine Nuts and Olives, Chicken Marengo and Seared Salmon with Black Olive Pesto.
