Wednesday, October 1, “Roasting”

Instructor: Chef David Russo. Our second class in a series on kitchen skills and techniques focuses on learning how to roast successfully. Learn how to get crispy, brown exterior and and perfect interior temperature for any cut of meat. We will prepare a roasted chicken, pork loin and prime rib and teach you how to get the results you want at home. You will also go home knowing how to roast potatoes and vegetables like a pro. Attendance in previous Building Blocks classes is not required. Chef Russo is a 1996 graduate of the Culinary Institute of America. He is currently an instructor for the Culinary Arts Program at Ivy Tech and is the owner of Epicure, Inc., an at-home professional chef and catering service. Class level: beginner.
