Azienda Agricola Quaresima is a small family business located in Cupramontana (Ancona). The story of its wine began with Aurelio Quaresima, known as Lello, owner of a three-hectare Verdicchio dei Castelli di Jesi Classico vineyard.
Lello was a well-known and authoritative character in the territory; a man who, like so many others, lived and told us about post-war life. He enjoyed it when impromptu guests came to his house. After having “delighted” them with wine and bewitched with the cellar, he entertained them until late in the evening with his faithful “organetto”. What fun !! When he left, his stories and his tricks had by now been handed down to his sons Donatello and Ivo, although engaged in other activities, they have at some point in their life, worthily followed up on their father’s teachings.
The cordon-trained vineyards are south-facing at 450 meters above sea level. The density of the vines is about 1,600 vines / Ha. With extreme care and simplicity, the vinification of all the grapes takes place. The pressing of the grapes is carried out with soft-presses (membrane presses), and subsequently thanks to the pumps, the must is passed into the stainless steel tanks where the lees are separated. Fermentation begins at a constant temperature of 18°C and can vary from 20 to 30 days.
