Situated 5 km from the center of Siena, la Torre alle Tolfe is a 100 hectares farm that traces its name back to the VIII century when was built as a watchtower for the defense of Siena. The first written records of winemaking on the estate date back to 1316. The Castelli history on the estate dates to the 1950s and now, Mania and Giotto are living on the estate and they represent the fourth generation. We’re situated at 300 meters above the sea level on a marine deposit form Paleocene, that’s why our soils are mostly sandy. We’re Organic since 2004 but we’re also part of the Vinnatur, Vignaioli dipendenti and Diversity Bio association to achieving the maximum expression of biodiversity and authenticity in the vineyards like in the wines.
We currently produce six wines: Chianti Colli Senesi, Chianti CS Riserva, Rosato Lunella, Ciliegiolo, Canaiolo and Colorino. We choose to vinify each of our 4 traditional grape varieties separately, which allows us to offer the unique opportunity to taste these varietals pure, as well as in blends in some of our Chianti wines. The 13 ha of vineyards are managed to maintain the natural biodiversity with zero impact. Our aim is to minimize as far as possible the use of technology and chemicals: these are seen more as a limitation than a help, standardizing the wines instead of letting their particularities and unique characters emerge. We’re using soils, entomological and botanical analysis instead, to understand our vineyards and the ecosystem that we’re surrounded by. To help and get help from every single living being.
