Greek Ravioli - The Good Gourmet Recipes

Ravioli Dough:
  • 400gr strong flour
  • 100gr Carob flour
  • 5 eggs
  • 150gr myzithra(is a Greek whey cheese from sheep or goats, or both)
  • 20gr spearmint
  • 1 egg
  • 5gr salt
  • 2gr pepper
Staka(a Cretan roux dish made from goat milk fat)


  1. We start with the dough. Mix all the ingredients and knead for 15 minutes. Rest for at least 30min.
  2. Put the myzithra in a strainer and let it drain for half an hour. Then add the spearmint, the egg and the salt,pepper to mizithra.
  3. Open the dough and make ravioli, filling them with the farce.
  4. Boil the ravioli into salted water until they start to flow (prox 5-6min)
  5. In a pan add 5-6 tbsp of Staka with some chicken stock and add there the ravioli. cook for 1-2min.
