Apple Gallette - Chef Eileen Quinn, Owner, Dinner at Eight Catering Service

Chef Quinn is an expert at light and healthy cooking and has been doing tasty dishes in this style for years.  There is no need forego dessert.  You should be able to fit this tasty 200 calorie apple pastry into your schedule.

Ingredients:

1 sheet puff pastry
1 cup applesauce
1 tsp fresh lemon juice
1/2 tsp ground cinnamon
1 tbsp brandy
1 tsp lemon zest
4 braeburn apples, cored, peeled and sliced
1/2 cup brown sugar
1 tsp pumpkin pie spice
4 tbsp butter

Thaw pastry dough overnight in refrigerator or 30 minutes at room temperature.  Roll out dough to make it even and flat.  Place dough on parchment paper lined sheet pan.  Chill while making the filling.

Place applesauce in a pan.  Add lemon juice, cinnamon, brandy and lemon zest.  Stir and bring to a simmer.  Cook and reduce applesauce to 3/4 cup.  Cool to room temperature.

Preheat oven to 375.  Spread applesauce on pastry dough to cover the surface leaving a 1/2 edge all around the dough.  Place rows of sliced apples on the sauce alternating directions.  Sprinkle with sugar and pumpkin pie spice.  Dot with butter.  Bake 20 to 25 minutes until apples are tender.  Serves 10
