Asparagus En Croute - Chef Eileen Quinn, Owner, Dinner at Eight Catering Service

Chef Quinn is an expert at light and healthy cooking and has been doing tasty dishes in this style for years.  This excellent appetizer has only 47 calories and 1.7 grams of fat.  It is delicious.

Ingredients:

3 oz. fat free cream cheese
2 slices turkey bacon, microwaved crisp and crumbled
10 slices Pepperidge Farm thin sliced white bread-crusts removed
1 tsp lemon zest
20 stalks fresh asparagus, cleaned and trimmed
non stick cooking spray.

Preheat oven to 350.  In a small bowl mix cream cheese, bacon and lemon zest.

For each appetizer roll out a slice of the bread with a rolling pin until it is quite thin.  Place a small amount of the cream cheese mixture on the bread slice and place two pieces of asparagus so that the tip of one piece is opposite the other.

Roll bread around the filling and place on a baking sheet.  Spray tops of appetizers with the cooking spray, place them in the oven and bake for 15 to 20 minutes until golden brown.  Cut each piece in half for a serving. Makes 20 appetizers.
