Chicken with Cilantro and Garlic - Chef Kip Peters, Executive Chef, South Bend Country Club

Be sure you buy chicken breasts with the bone and skin.  You'll need this type of meat to allow you to stuff the breasts for this savory and delicious entree.

Ingredients:

6 chicken breasts with bone and skin
1 cup chopped fresh cilantro
4 cloves chopped garlic 
1/2 cup minced onion
1/4 cup white wine
Cumin
Salt and pepper

Saute cilantro, garlic and onions in extra virgin olive oil until onions are translucent.  Deglaze pan with white wine and set aside to cool.  Pat chicken breasts dry and season with cumin salt and pepper.  Lift skin from chicken to allow you to stuff the sauteed ingredients under the skin.  Place in refrigerator for 30 minutes.  Preheat oven to 375 degrees.  Bake for 20 to 35 minutes depending on size of breasts until chicken is done.  Serves 6.
