Shrimp with Cilantro and Lime - Chef Kip Peters, Executive Chef, South Bend Country Club

Cilantro and lime have been a trendy combination lately and for good reason.  Here's a quick and easy cold shrimp appetizer using this popular combination of flavors that will add some zing to your next party.

Ingredients:

40 fresh peeled and deveined 21-25 shrimp.
1/2 cup chopped fresh cilantro
2 limes, zested and juiced
1 tsp cumin
Salt and pepper to taste

In a large pot, bring 2 quarts of water to a boil.  Add shrimp and continue boiling for 2 minutes then drain, rinse and cool shrimp.

Place cilantro, lime zest, lime juice and cumin in a bowl.  Mix well, adding salt and pepper to taste.  Add cooked shrimp to bowl.  Cover, refrigerate and marinate for up to 48 hours.  To serve, drain marinade and serve shrimp cold.  Serves 8.
