Curried Saffron Tomato Sauce - Chef Phillip Abbott, President, Terra Spice Co.

Chef Abbott always highlights his spices and seasonings in outstanding dishes.  He served this wonderful sauce made from his hot curry powder and Iranian saffron with Blue Nose Grouper during a cooking class on Australian cuisine.  It would be an outstanding condiment for shrimp or any number of other dishes.  You can buy his spices with our label on it right here on the web site.

Ingredients:

1 onion
1 clove garlic
2 cans diced tomatoes in juice
2 cups chicken stock
1 pinch saffron
1 1/2 tbsp Terra Spice Curry Powder (hot or mild)
2 tbsp clarified butter
Salt and pepper to taste

Dice onions, chop garlic and saute in a sauce pan with clarified butter and curry powder until onions are translucent.  Add chicken stock, tomatoes and saffron.  Simmer sauce for about 1/2 hour and season with salt and pepper to taste.  Puree the cooked mixture in a blender.
