Fennel and Orange Salad - Chef David Russo, Instructor of Culinary Arts, Ivy Tech State College.

The combination of orange and fennel flavors works very well in this salad.  The fennel tends to lose its licorice-like taste and provides a tasty texture to the dish.

Ingredients:

2 fennel bulbs, shaved
2 oranges peeled 
3 tbsp extra virgin olive oil
2 tbsp honey
salt and pepper to taste

Shave the fennel with a mandoline so that it looks like slaw.  Peel the oranges and cut out the sections.  Squeeze the leftover pulp to remove the juice and discard pulp.  Combine ingredients in a bowl, toss and serve.  Serves 8.
