Gingerbread - Fred Whitlock

Gingerbread is traditional at Christmas time and here's a tasty dough you can use to make cookies or even a gingerbread house.

Ingredients

½ cup (1 stick) unsalted butter
½ cup brown sugar
¼ cup molasses or dark corn syrup
1 tbsp. cinnamon
1 tbsp. ground ginger root
1 ½ tsp. ground cloves
1 tsp. baking soda
2 cups all purpose flour
2 tbsp. water

Method

Mix the ingredients in the same manner you would mix a cake batter. Cream the butter and add the brown sugar. Then add remaining ingredients except for the flour and water. Finally add the flour and water and mix just enough to combine but not enough to develop the gluten in the flour. Refrigerate dough for about an hour. At that point the dough is ready to roll out and cut into whatever you need for your project.
