Huevos Rancheros - Fred Whitlock, The Good Gourmet Huevos Rancheros is a spicy traditional breakfast dish from Mexico that places fried eggs and sofrito over a tortilla. Traditionally the eggs are added to the sauteed sofrito and fried there. If you are making this dish for a family or other group of people we suggest sauteeing the sofrito in one skillet and frying the eggs in another to bring them all together at once. Here is our version of the dish as it was cooked at Breakfast Club. Ingredients: 4 corn tortillas 8 eggs 1 onion, coarsely chopped 1/2 green bell pepper, coarsely chopped 1 tomato, diced 1 small Jalapeno pepper, chopped 2 cloves garlic Salt and pepper to taste Cooking oil Salsa picante 1 cup coarsely grated cheddar or jack cheese Preheat oven to 350. Saute onion, bell pepper, jalapeno and garlic until peppers are soft and onions are clear. In the meantime brush tortillas lightly with oil and bake them on a sheet pan for about 10 minutes or until crisp. When tortillas are done, put diced tomato in the sauteeing sofrito, salt and pepper and heat through. Fry eggs over easy in a separate non stick skillet and salt and pepper to taste. Serve by topping each tortilla with the sofrito mixture, then a couple of fried eggs, then grated cheese and finally a tsp. of salsa. Ole. Serves 4. |
