Corn with Mole spice - Chef Phillip Abbott, Co-owner, Terra Spice Co.

This Mexican style corn is fast, easy and yet tasty.  It adds an extra dimension to any Mexican meal.

Ingredients:

1 pkg. frozen corn, defrosted and drained (or fresh corn if available)
1/2 of a small small jar of minced pimiento
1 tbsp. extra virgin olive oil
1/2 tsp. The Good Gourmet Mole Spice Rub
Heat a saute pan, add oil, then add remaining ingredients and saute
over medium heat for 2 minutes until flavors are blended.
