Mole Spice Rub Chicken - Chef Philip Abbott, Owner, Terra Spice Co.

You probably don't have the time to make a traditional Mexican mole sauce so here's a quick and easy alternative using one of our favorite spice blends.

Ingredients:

1 large roasting chicken
Olive oil as needed
1 1/2 oz The Good Gourmet Mole Spice Rub

Remove bag of "parts" from chicken cavity.  Rinse and pat the chicken dry.  Make a paste with the olive oil and Mole Spice Rub.  With your hands rub the paste instide and outside the skin of the chicken.  Cover and refrigerate overnight.

Remove chicken from refrigerator and place in a roaster.  Roast chicken at 350 degrees until the juices run clear or until it reaches an internal temperature of 160 to 165 degrees (about 2 to 2 1/2 hours.)
