German Style Baked Pancake - Traditional recipe

From our breakfast club.  The very eggy batter used in this recipe causes the pancake to grow and puff up in the oven.  It is normally eaten with just powdered sugar and lemon juice.  Optionally, you can top it with fresh fruit such as berries or sliced banana or peaches and serve it with whipped cream, fresh cream or maple syrup.  It can serve as a base for any number of excellent breakfasts.

Ingredients:

2 tbsp. butter
3 eggs
1/2 cup all purpose flour
1/2 cup milk
Dash of salt
Grated nutmeg to taste

Place butter in an ovenproof skillet or pie pan and then place it in a 400 degree oven for 4 or 5 minutes until the butter melts.

In a medium mixing bowl, beat eggs with a whisk until just combined.  Add flour, milk, salt and nutmeg and beat batter until smooth.  Pour the batter immediately into the hot pan and bake for 25 minutes or until well browned.

Sprinkle powdered sugar over interior of pancake and squeeze 1/2 a lemon over the sugar.  Slice and serve.  As an option, you can add berries or sliced fresh fruit and serve with whipped cream or maple syrup.  Serves 4.
