Roast Pork Loin - Judy Shertzer, The Good Gourmet staff

Pork and garlic come together deliciously in this relatively simple recipe.  Be sure to give the meat time to marinate properly for best results.

Ingredients:

3 lbs. pork loin roast, membrane removed
3 tbs. extra virgin olive oil 
6 tbsp.  garlic, minced
6 tbsp. chopped fresh rosemary leaves

Marinate pork overnight in the other ingredients.  The next day, preheat oven to 375 degrees.  Roast pork uncovered on a rack for 1 hour and 15 minutes or until a meat thermometer registers 135 degrees (for medium rare) or 140 degrees (for medium).  Allow meat to rest for 10 minutes before slicing.
