Rosemary Garlic Chicken - Chef Kip Peters, Executive Chef, South Bend Country Club

For his "Chicken That's Fun" class, Chef Peters prepared a sizeable array of simple yet delicious dishes.  This is one of them.  Preparation time is quick.  Just mix a few ingredients, coat the chicken parts and put it in the oven.

Ingredients:

1 whole chicken, cut into pieces
1/2 cup olive oil
4 cloves garlic
4-6 sprigs of rosemary separated from stems
2 oz. white wine
Salt and pepper to taste

Preheat oven to 400 degrees.  Mix together olive oil, garlic, rosemary, salt and pepper.  Coat chicken pieces thoroughly.

Place in a baking pan and bake for 20 minutes.  Remove from the oven and add wine to the pan.  Bake for 15 or 20 minutes more until chicken is cooked through.  Serves 6.
