Salad with Smoked Tomato Vinaigrette - Chef Philip Abbott, Owner, Terra Spice Co.

Here's an easy way to make a smoked tomato vinaigrette.  The secret is using The Good Gourmet Smoked Tomato Seasoning.  You'll get a delicious salad without going through the time and effort of cold smoking tomatoes.

Ingredients:

Mesclun greens
Ripe tomatoes, peeled and seeded
Olive Oil
Balsamic Vinegar
The Good Gourmet Smoked Tomato Seasoning
salt and pepper

Core and blanch two tomatoes to make them easy to peel and then put them in ice water immediately to keep them from cooking.  Peel and seed them and put them in a blender with about 1 tbsp. of the Smoked Tomato Seasoning and vinegar and salt and pepper to taste.  Add a little extra virgin olive oil as it blends to make a smooth emulsion.  Serve on Mesclun greens or a salad of your choice.
