Spicy Barbecue Sauce - Judy Shertzer, The Good Gourmet Cooking School Manager

Ingredients

2 tablespoons vegetable oil
1 medium onion, finely chopped
1/3 cup chopped celery
1 tablespoon minced garlic
1 tablespoon regular or smoked paprika
1/2 teaspoon cayenne pepper
1 cup ketchup
1 cup flat beer
1/4 cup Cider Vinegar
1/2 cup honey
1 tablespoon Worcestershire sauce
Salt and Pepper to taste

Directions

Heat vegetable oil in heavy medium saucepan over medium heat. Add onion and celery and sauté until tender, about 5 minutes. Add garlic, paprika and
cayenne and stir 1 minute. Add ketchup, beer, vinegar and Worcestershire sauce.

Reduce heat to medium-low. Simmer uncovered until flavors blend and sauce is slightly reduced, stirring occasionally, about 30 minutes. (Can be
prepared 1 week ahead. Cover and refrigerate.)

Makes 1 1/2 Cups.
