Summer Tomatoes with Basil - Chef Kip Peters, Executive Chef, South Bend Country Club

Cool and refreshing, this simple yet excellent salad will complement any meal.  Be sure to let things marinate properly so make this dish ahead of time.  The salt will draw out the flavor of the tomatoes to make a delectable dish.  Chef Peters used a mixture of red and yellow tomatoes to make this salad as colorful as it is tasty.

Ingredients:

4 ripe tomatoes
1/2 red onion, julienne
2 cloves chopped garlic
8 large fresh basil leaves, chopped
1/4 cup red wine vinegar
1 tbsp. sugar
1/2 cup olive oil
salt and pepper

Cut each tomato into 8 wedges and place in a mixing bowl with onion, garlic and fresh basil.  Mix sugar vinegar and olive oil.  Pour over tomato mixture.  Season with salt and pepper.  Marinate for 1 or more hours.  Serves 6.
