Braised Mariner Style Tuna Filets (Tonno ala Marinara) - Fred Whitlock, The Good Gourmet staff

This excellent entree is adapted from a traditional Calabrian recipe for braised tuna filets.  I prefer to use thick filets of fresh Yellowfin tuna for this recipe.  If you can't find them locally you can buy them from http://www.charlestonseafood.com.  Fresh mint is a very important ingredient and worth finding for this dish.

Ingredients:

1/3 cup extra virgin olive oil
1/3 cup white wine
1 sweet yellow onion, diced
1 large tomato, diced
1/2 small jar capers, drained
1/4 cup fresh mint, chopped
1/4 cup fresh basil, chopped
1 lemon
2 large fresh tuna filets
1 package Linguini

Preheat oven to 350 degrees.  Place first 7 ingredients in a covered casserole and place tuna filets on top.  Salt and pepper to taste.  Cover and bake in oven for 20 - 25 minutes.  Half way through, remove casserole from the oven and turn tuna filets over.  

Cook linguini in vigorously boiling water until it is al dente.  Divide tuna filets and plate them using a mint leaf and capers for garnish with 1/4 lemon on the side.  Serve linguini on the side and use the braising liquid, vegetables and herbs as a condimento or sauce for the pasta.  Serves 4
