Interpretation of a caprese tomato mozzarella salad

Caprese Mozzarella Tomato Salad - Schubel Dubel - The Good Gourmet

For the bread praline:
  • 1 half a ciabatta bread (already baked)
  • 100 g breadcrumbs
  • a little sparkling water
  • 2 tbsp olive oil
  • 1 pinch of salt
  • 1 pinch of sugar
  • finely grated Parmesan
  • fresh parsley
  • fresh oregano
  • fresh basil
For the mozzarella mousse:
  • 245 g mozzarella
  • 250 gr. Mascarpone
  • salt
  • pepper
  • 1 clove of garlic
  • a pinch of sugar
Other ingredients:
  • rocket
  • cherry tomatoes
  • coarse sea salt
  • fresh rosemary


For the “mozzarella mousse”:

  1. Put the mozzarella balls with the mascarpone in a bowl.
  2. Finely chop the garlic and add.
  3. Puree the whole thing with a hand blender as finely as possible (add a dash of milk if you like)
  4. Season the mixture with salt, pepper and a little sugar.

For the bread praline:

  1. Cut the ciabatta (preferably a bit stale) into cubes.
  2. Finely chop the parsley, basil and oregano and add them.
  3. Soak the bread with water and olive oil.
  4. When the bread is soft enough and you can knead it without problems, season with grated Parmesan, salt, pepper and sugar.
  5. Add the breadcrumbs and knead again.
  6. Bring the mixture into the desired shape and fry on all sides in a pan with olive oil.
  7. Wash the tomatoes and rocket and arrange
