for 4 people
  • 2 egg yolks
  • 70 g sugar
  • 100 g mascarpone
  • 250 g very cold whole liquid cream
  • 12 spoon cookies
  • 25 cl passion juice
  • passion fruit


  1. Put the juice in a salad bowl, soak the cookies, and place them on the bottom of the serving bowls.
  2. Combine the egg yolks and sugar in a cold bowl, add the mascarpone and cream.
  3. Assemble with a hand mixer.
  4. Pour the mascarpone cream.
  5. Place in the fridge for at least 2 hours.
  6. When ready to serve, decorate with a half passion fruit.
