This subtle blend of 3 grape varieties offers lightness and fruitiness.

A perfect champagne as an aperitif or for a festive tasting. As an accompaniment to a family lunch, with white meat or a fish terrine. A champagne for sharing.

To accompany your more gourmet moments, this cuvee exists with a higher dosage (Extra Dry or Demi sec).

A champagne at all times. Also pleasant as an aperitif with small puff pastry appetizers, or as an accompaniment to dinner. It will sublimate a beautiful poultry or a white fish.

It has a strong character, with a slightly bitter flavor, ideal to accompany refined dishes without overwhelming the taste of the dish. The early harvest also gives it a pungent after taste that makes this Oil EVO interesting and harmonious as a whole. Made entirely from the Caninese Cultivar.

Bouquet: medium fruity, herbaceous net of olive, with soft notes of artichoke, green grass and chicory.

Taste: clean, herbaceous, opens with a bitter sensation followed after 20 seconds by a pleasant and very persistent pungent note.

Bouquet: light fruity, fresh net of olive, with soft notes of apple and ripe fruit.

Taste: clean, banana and apple, opens with a sweet sensation followed by a pleasant and light pungent note, absence of bitterness.

Its use is recommended raw on salads, bruschetta, pinzimonio, fish, preparation of oil and mayonnaise. In the kitchen it is excellent for sauces, sautés and fries.

Taste: clean, herbaceous, opens with a slightly bitter sensation followed by a pleasant and persistent pungent note.

Its use is recommended on bruschetta, pinzimonio and fish, it finds its exceptional placement on a raw aubergine parmigiana or a fillet of croaker fish, formidable on the scoglio spaghetti.

In the kitchen it is excellent for the preparation of meat sauces and for frying, especially for long cooking.

Marina Colonna - Olive oil tasting and harvest

Harvest

In Southern Molise, the harvest starts at the beginning of October, when the olives have reached the highest levels of polyphenols that will provided the anti-oxidant qualities to the olive oil. Pneumatic combs are used for harvesting the olives that will produce the olive oil. The table olives are harvested by hand.

Oil Mill

The olives harvested arrive at the mill and they will be transformed in less than 12 hours from the moment of the harvest.

The grinding process and the temperature are controlled at all times to insure the qualitiy of the olive oil.

The oils obtained from the different varieties are stored in stainless steel vats under nitrogen, each variety is kept separate until it is used for the final blend.

Bottling

The bottling of the oil is done by hand in anfora like bottles. The “anfora” bottle containing Colonna oil is a registered patent, the brand name is also covered so that there is no chance of counterfeit. The bottle shape was inspired by an ancient anfora of the family collection.

Each stage of production, from tending the plant to extracting the oil, is important to achieve a high quality extra virgin olive oil that has all the fundamental olfactory characteristics, flavour and health benefits, making it an indispensable part of our everyday healthy diet and crucial for the prevention of common illnesses.
